Colombia is known for some of the best coffee in the world with a very diverse production. 600,000 growers in Colombia supply the world with about 12% of its Arabica coffee, the 3rd largest producer behind Brazil and Vietnam.

Much of the coffee sold and which we consume from Colombia is from 36 regional cooperatives. Set up by the federation of coffee growers (FNC) the cooperatives guarantee farmers sale of produce.

Here at Lost Sheep we use over 10 tonnes annually of speciality grade, regional cooperative coffee from Colombia. Sweet, well balanced and a great way to get consistent high-quality coffee in blends and in our capsules!

However, we also like to explore Colombia’s coffee diversity by selecting seasonal micro lots from farmers.

This coffee is also a traditional washed process. This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature-controlled conditions until ideal moisture content was achieved.

Washed coffees really highlights the terroir: where it is grown, what soil it is grown in and what altitude it is grown at! Clean tasting and not tasting of the process. Which is often the case with Natural, honey and experimental processes. If the cherries are of poor quality, not ripe or full of defects, the washed process can also highlight the imperfections and make a coffee taste bad! Coffee is exposed to its true self, stripped back and honest. Making Angelo Zapata’s work even more valued!
