Description:
Dr Congo - Kalungu is from an organisation which has more than 5,600 farmers, around 20 percent are women. It's located near Lake Kivu in the Democratic Republic of Congo. Each of the farmers has a small area of farmland for their coffee approx fewer than 2 hectare in size.
This cooperative was the first to achieve Fair Trade certification in Congo, and the coffee also carries organic certification. At this washing station, the coffee is de-pulped on the day it's delivered, and fermented dry for 12 hours. It then spends 12 hours under water before being passed through the washing canal, and then soaked for an additional 12 hours. The coffee is then dried on raised beds under a cover of shade for 14–20 days.
