In The Cup Expect: Christmas Pudding, Brandy Butter & Festive Cheer!
Jairo Arcila exposes the cherries to a dry anaerobic fermentation for 24 hours, placed on raised beds until 18% moisture content is achieved, the coffee is then placed inside bags for 50 hours to continue drying – Then the cherries are placed on raised beds till 10.5% moisture content is achieved. After this process, the dried cherries are then placed in used rum barrels for 20 days, the cherries then absorb the flavours in the barrels giving the coffee it’s unique taste profile!
Felipe Arcila creates the unique flavour by putting the best cherries through an anaerobic fermentation of 72 hours – during fermentation they add tartaric acid and cinnamon to enhance the flavour, in the last step they are dried on raised beds to 10.5% moisture content!
All for that perfect cup!
