We absolutely love coffee from Ethiopia and the crazy flavours you can achieve from Ethiopia coffee is amazing, we often think of Ethiopian coffee as that head-turning moment in being a coffee drinker. That moment when you have to look twice at the cup to make sure it is actually coffee you're drinking!
The thing with coffees in Ethiopia is they are typically traceable to the washing station level, this is because many smallholder farmers own less than 1/2 a hectare of land and as little as 1/8 hectare on average!
Some Geek Notes:
Halu Beriti Washing Station was established in 2014 and serves a selection of smallholder producers, who deliver their coffee in cherry form. For this special preparation washed lot, the coffee is meticulously sorted with more attention during the entire process, from delivery throughout the drying period. The seeds are picked through as they dry on the raised beds to remove any that are drying unevenly or that show signs of mill or insect damage, for instance.
After delivery to the washing station, it is de-pulped and undergoes a fermentation
time of 48–72 hours. It is washed clean, then soaked for 8–16 hours, then washed
one more time before being dried on raised beds for 9–12 days.
